Investigating the Usefulness of Wild Dioscorea esculenta (Wild Yam) Flour as Substrate for Citric Acid Biosynthesis

Background and Objective: The cost of substrate represents a significant percentage the total biosynthesis citric acid. There is need to continue searching for better cheap underutilize starchy raw material acid biosynthesis. Therefore, objective this research was biologically synthesis in submerged fermentation Aspergillus niger using wild Dioscorea esculenta (wild yam) tubers.
 Methodology: Submerged conducted effect concentrations, combined pretreatment membrane permeability induction on were carried out.
 Results: Citric concentration increased as yam with maximum production 10.5 ± 0.9 g/ l after 96 hours fermentation. overnight 0.3 % NaOH before at 121oC 20 minutes one time yielded 15. 0 ±1.2 g/l Calcium chloride produced 24.5 1.3 respectively fermentation.
 Conclusion: result showed that tubers can be used from enhanced by concentration, induction.
